This self-proclaimed “Best Ever Carrot Cake” recipe has a lot to live up to, but with an unwavering commitment to freshness, moisture and that all important crunch – it has earned its stripes in my eyes.

Hailing from Sydney, Australia, I’m spoilt for choice when it comes to fashionable cafes spawning bearded hipsters and inflated prices; Bourke Street Bakery being one of them. But what this boulangerie lacks in humility, it makes up for in flavor. I’m yet to find a carrot cake that slides down easier with a morning Earl Grey than this one does.

What happens when you take a third course favorite and combine it with another? You get a mouth-watering hybrid of tanginess, tenderness and tight trousers. Mel was certainly feeling daring when she whipped this one up in her kitchen.

For this last recipe, I came across a tasty nut-free carrot cake right out of Elana’s fancy pantry, so that people with food allergies can devour this recipe without caution.
